Grilled or pan-seared in a cast iron skillet is the best way to go. Be sure its at room temp before you cook it – that’s important. Ribeyes are so tender, there is really no need to marinate them. I do love to rub mine with a crushed garlic clove before I cook it. How long to cook depends on the thickness – if you’re pan searing, add a bit of oil to the pan and let it heat up a lot before you add the steak. Couple of minutes on each side, and then into a 200F oven for a few more minutes (again – depends on the thickness and how you like it done!)
