and make them every year with a cookie press using the snowflake die/stencil. They are delicious! Snowflakes 2 1/2 cups sifted flour 1/2 teaspoon salt 1/4 teaspoon cinnamon 1 cup butter 1 – 3 oz. package of cream cheese 1 cup sugar 1 egg yolk, unbeaten 1 teaspoon vanilla (We don’t add it, but the recipe also calls for a tiny bit of grated orange rind) and Red & green sugar for decorating • Grease cookies sheets (or use parchment paper). • Sift flour, salt and cinnamon into a bowl. • In another larger bowl, cream butter & cream cheese until soft. Add sugar gradually, creaming well after each addition until well blended. • Beat in egg yolk & vanilla. • Add sifted dry ingredients, a little at a time, & blend well. • Pack dough into cookie press using any desired design-forming plate (we use the snowflake or the tree); press dough onto prepared cookie sheets; decorate with red or green sugar. • Bake in 350 degree oven 15-18 minutes, or until edges are light brown. • Run spatula under cooki

PREP TIME 15 Min COOK TIME 10 Min READY IN 40 Min Yield: 3 dozen INGREDIENTS • 1/2 cup shortening • 1 (3 ounce) package cream cheese • 1/3 cup white sugar • 1 egg yolk • 1 teaspoon lemon extract • 1 1/2 cups all-purpose flour • 1/2 teaspoon salt DIRECTIONS • Preheat oven to 400 degrees F (200 degrees C). • In a medium bowl, cream together shortening, cream cheese, and sugar until light and fluffy. Beat in egg yolk, and lemon extract. Combine flour and salt; gradually mix into the creamed mixture in three additions, mixing well after each. Load dough into a cookie press, and press cookies onto an ungreased cookie sheet. • Bake for 8 to 10 minutes in the preheated oven, or until lightly golden. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely. In large mixer bowl combine sugar, butter, egg, salt, and vanilla. Beat at medium speed, scraping bowl often, until mixture is light and fluffy, 2 to 3 minutes. Add flour. Beat at low speed, scraping bowl often, until well mixed, 2 to 3 minutes. Place dough in cookie press. Form desired shapes 1 inch apart on cookie sheets. Bake for 6 to 8 minutes or until edges are lightly browned. You can also color dough with food coloring, and decorate with dragées and colored sugar.
