What is yeast freezing?
Normally, liquid yeast cultures cannot be frozen because the water crystals rupture the cell walls. It is possible to cover with or suspend in a glycerine+water solution to get the long-term storage benefits of freezing temps without crystal formation. Pro: longer-term storage than slants or stabs. Con: Messy. Requires frost-free freezer or a cooler-in-freezer setup. Sterility/starter/refrigeration required.
