Everyone is partially wrong. The widget is actually filled with beer. Prior to sealing, the can/bottle is pressurized with CO2 and nitrogen. The widget, already in the can, receives the same pressure as the rest of the beer. When the can/bottle is opened, pressure is released through out. The pressurized beer in the widget shoots out (much like a water pistol). THis spray kicks up all the gasses, giving you that Guinness head.
