The white residue floating at the bottom of the bottle is potassium bitartrate better known as cream of tartar. This happens when wine is chilled and allows the tartrate crystals to clump together and fall out. Cream of Tartar is a naturally occurring product from wine and is quite benign. In fact some people, including myself, drink it. This is the same product you see on grocery store shelves used for cooking and can only be obtained from wine. Our wine is a natural wine and has not been cold stabilized to date. We are however now cold stabilizing to alleviate any aesthetic concerns customers might have.
