What is the shelf life of a shell egg?
If shell eggs are kept refrigerated they can retain their quality for quite a long time. I have graded 3 month old refrigerated eggs and found them to still be grade A. Out of refrigeration, eggs can rapidly decline in quality and this parallels a decline in nutritional value. Of course, any shell egg may contain Salmonella enteritidis and may be extremely dangerous if consumed raw or under-cooked. This risk can be enhanced if the eggs have also been subject to temperature abuse.
