The restore policy for the Exchange servers is that restores from backups are performed for disaster recovery (hardware failures, corrupt Exchange databases, etc.) operations only. However, in most instances users can recover deleted items, including items that were inadvertently moved to another mailbox or PST, by using the Recover Deleted Items functionality built into Outlook.
