Purchasing a whole or half carcass is an efficient way of putting grass-finished beef in your freezer if you prepare and eat beef at home. You have a large selection of various cuts available at your fingertips for easy meal preparation. Plus you can have it cut and packaged the way that is handiest for you. Procedure 1) Let me know you want a beef or lamb. If available, it will be reserved for you. (Let me know ASAP, reservations are needed at the abattoir) 2) Animal is delivered to the abattoir and I’ll advise you of the cost. Payment for the animal is due at that time. (Deliveries are made in May, October, and December for calves; lamb is delivered only in May.) 3) You call the butcher and discuss with him how you want the beef cut and packaged. 4) The butcher will call you and let you know when it is ready for pickup. If you need it shipped, let me know and i’ll pick it up and ship it. There is an additional charge. The butcher does not do shipping.
