What is the nutritional value of olive oil?
From a nutritional point of view olive oil has a predominantly energetic function and like all oils contains practically 100% lipids. In fact fatty or lean oils do not exist. Extra virgin olive oil contains a good quantity of vitamin E (a natural antioxidant), a discreet dose of essential fatty acids, an elevated quantity of oleic acid which does not promote the synthesis of cholesterol. Among the valued qualities concerning health, olive oil protects against the calculosis of the gall bladder, has a protective effect on the stomach, and has a stimulating action on the intestinal walls.
