What is the nutritional value of a serving of grade B organic maple syrup?
Maple syrup is nearly entirely sugar and water. Two teaspoons has about 35 calories worth of sugar. The only nutrients it has in significant amounts are manganese and zinc, which your body needs in microscopic amounts. It has slightly more of those minerals than say, honey. Darker grades of syrup like that Grade B you mention have some fructose and glucose, while pure syrup has more sucrose. But those nutrients are easily available in other foods that also provide other nutrients like protein, vitamins, fiber, etc. There is no reason to eat maple syrup for nutritional value. Of course, maple syrup sure is great on blueberry waffles. Not everything you eat has to be a nutritional powerhouse, in my book 😉 Sources: http://www.whfoods.com/genpage.php?
