Typically, room temperature is around 70F. Edit… It really doesn’t matter what the internal temp is before cooking. I’ve cooked straight from the fridge and I’ve cooked letting the roast come to room temp. It was all good. Like I said… it’s the final internal temperature that’s the important part. You’re worrying about a parameter that has a small effect on the final outcome.
