Anything that doesn’t involve boiling or discarding the skins is healthy for your sweet potatoes. The skins have the most fiber, iron, and b vitamins in the entire vegetable. The skins have most of the nutrients, though the sweet potato flesh has the most potassium (and carbs, come to think of it). Boiling leaches the nutrients out. Microwaving is quick and preserves the most vitamin c, which sweet potatoes are abundant in. Steaming is the next best option.
