A good quality lean steak can be incredibly nutritious. With the exception of fibre, beef contains most of the nutrients of bodies need, although some, such as vitamin C, calcium and folate are only present in small amounts. It is also a valuable source of essential minerals such as iodine, manganese, zinc and selenium – although the quantities depend on the soil in which the cattle grazed. Lean beef contains less than 5% fat, less than half of which is saturated. The healthiest way to cook steak is to remove any visible fat and then grill or dry fry using a griddle pan. If flame-cooking, avoid too much charring, as this forms substances that have been linked with increased risk of cancer.
