What is the gross green stuff inside called?
The “green stuff” inside a cooked lobster is the tomalley, or tamali. In life, it served as the lobster’s liver and pancreas. Some people consider it a delicacy, while others find it disgusting. Since one of the tomalley’s functions is to filter out contaminants and toxins (including dioxins) from the lobster’s body, these substances can accumulate in the tomalley. Because of this risk, eating the tomalley is no longer recommended.
