What is the grading system for Pure Maple Syrup?
Pure Maple Syrup, with the proper sugar density and the distinctive and unique maple aroma, is graded by color or rather, by light transmittance. Many variables can affect the color or light transmittance of Pure Maple Syrup: time before the sap is boiled down, average temperature of the sap, time of day, soil, etc. In the 1970s, USA and Canada agreed on the same light transmission breaks for grades. In an effort to keep their national identity, different terminology for these breaks was developed.
