I will share my LEMON CHEESECAKE recipe. 1 small package lemon jello 1 cup water 1/2 cup sugar 1 package (8oz) cream cheese 1 can evaporated milk (cold) 3 tablespoons lemon juice 12 graham crackers 1 stick butter Procedure: In small mixing bowl, add 1 cup boiling water to 1 small package lemon jello. Stir until jello dissolves. Place in fridge to cool. In another mixing bowl, place cream cheese and sugar. Using a spatula, incorporate the sugar into the cheese until it is a creamy mixture. Place in fridge. In a large mixing bowl, whip cold condensed milk with lemon juice until it forms foamy peaks. Make sure the milk is very cold so that the foam holds its texture. Grind graham crackers and mix with softened butter. Spread graham cracker mixture out on the bottom of a cake pan saving a small handful of mixture to garnish the top of the cake.
