What is the difference in virgin olive oil olive oil?
Virgin olive oil is from the first press of the olives. The olives are not refined or heated to get more oil out of them. That process would change the flavor and the chemistry of the oil. Most virgin olive oil will be less than 2% acidity but it can be as high as 3%. Though you don’t ask in your question, the highest grade is extra virgin olive oil. This is small percentage of the olive oils that are produced and like the 2nd highest grade, virgin olive oil of which you asked about, it is cold pressed from the first press of the olives. Extra virgin is fruitier and more complex in flavor than virgin olive oil. Some people compare the selection and taste of extra virgin olive oil to that of fine wine tasting.
