buttercream or a whipped icing. A good baker can make buttercream just as smooth as fondant. Personally I think fondant and sugarpaste both taste like crap. They also get hard and crack and look pretty gross after you cut the cake. It should look good but if it tastes bad no amount of beauty will save it. If you are ouside in Texas summer make sure the cake has plenty of shade and a mosquito net to keep the flies off. They get stuck in the icing and die and it looks very nasty to see the MOH picking dead flies and other bugs off the cake before pictures. A tip is to put a baking pan with ice under the cake plate to help keep it cool so the icing doesn’t melt.
