What is the difference between Single Acting Baking Powder and Double Acting?
Double acting baking powder reacts with your ingredients twice. The first reaction occurs when you mix it with the wet ingredients, this starts its raising properties. The second reaction occurs in the oven as the heat activates it again, causing a second rise during baking. 1. Usually double nowadays. 2. Possibly. Its second chemical reaction may not take and could maybe cause some bitterness. Other variables apply. 3. Depends on the recipe and how careful you are with measurements. Too much baking powder will cause bitterness, and it could be the issue if your recipe wants single acting powder. 4.
