Rolled Fondant is sugar dough that is rolled with glucose and therefore does not have a very good taste. The nice thing about Fondant is that it has a very smooth surface and does not show some of the spatula marks seen on Buttercream. Fondant is rolled out like a pie crust and draped over the cake layer. It is then trimmed or molded to fit. The more conventional Buttercream has a much better taste. A quality cake designer can smooth Buttercream almost as smooth as Fondant.
