A round is where all parts have identical music that repeats. For example, “Row, row, row your boat”. A canon starts with one melody. When the other parts come in, it usually involves some sort of imitation. The easiest example to recognize is Pachebel’s Canon. Each voice (instrument) enters with a new idea that is elaborated upon from the initial bass line.
