What is the difference between Pink, Keta, Coho, Sockeye, and King?
Pinks are mild, delicate fish. They’re convenient because they thaw and cook quickly, and work well for picky eaters. Keta (another name for Chum) salmon have a meaty texture and mild flavor, which makes them work well for marinating and seasoning. Sockeyes, Cohos, and Kings are rich fish with robust salmon flavor and lots of oils. These fish are all heaven on the grill and don’t need much seasoning.
