EV is not as useful for frying or sauteeing as it has a low smoke point—-pure olive oil has a somewhat higher smoke point and can also be found with a very light flavor—not too olive–if that is what you prefer. Vegetable oil is viewed as a neutral oil that is all purpose. You can make salad dressing with it and also fry with it.
