What is the difference between galleys and galleons? The galleon is the better ship, right?

Yes and no. Galleys are actually better suited to fighting, and carry more marines. They do, however, suffer from low seaworthiness and short range. So from an operational point of view, caravels and galleons are the better ships, but galleys rule in a stand-up fight.
