What is the difference between fresh California lamb and mutton?
Fresh California lamb is meat from a young animal. It has a mild flavor and tender texture that is excellent lightly seasoned with salt, pepper and garlic or can be enhanced with a myriad of herbs, spices and marinades. Mutton is from animals two years and older and as such has a much stronger flavor and less tender texture.
