What is the difference between focaccia bread and ciabatta bread?
The difference is that a proper ciabatta starts with a biga while a focaccia doesn’t use a biga. So when they are baked, a focaccia is a little denser, while a ciabatta is light and full of holes. And the denser crumb makes for a bread that is easier to add things to like more olive oil, olives, whole fresh spices and cheese, whereas the lightness of a ciabatta is enjoyed plain.
