What is the difference between Cognac and Armagnac?
The simple answer to this is that Cognac is made in the Cognac region of France, and Armagnac is made in Gascony and is limited to the use of only a few speific grape varieties. Of course, where the drink comes from does not directly impact its flavor. What doe impact its flavor are the manufacturing rules it has to meet to be able to be legally called cognac or armagnac. Both are aged grape brandies. The chief difference between the two methods lies in the distillation technique used and the oak barrels in which the brandies age. Armagnac is distilled using the continuous distillation method, while cognac distilled twice using batch still. Oddly enough, Armagnac is far older than coganc, yet today it uses the newer distillation method. The batch still method for cognac is as simple as taking the liquid you get from fermenting grapes (wine in a sense) and boiling it so that it evaporates. A hood over the pot catches the liquid, cools it and lets it drip into another container. This is
