Cajun is the name of people with french background people living mainly in Louisiana (Cajun French is a dialect of French, which is pretty different than standard French), who are mainly descendants of Acadian (which includes places OTHER than Nova Scotia) exiles. A Creole is not a dialect. It is its own language that has developed from other languages. (eg. Haitian Creole originated mainly from French, but also includes Arabic, Portuguese and many african languages). Afrikaans used to be a Creole, but is now its own language.
