Both bittersweet and semisweet chocolate are dark chocolate with a cocoa content of at least 35%, but there are no regulations regarding labeling chocolate bittersweet or semisweet, and everyone you ask may have a different answer. One company’s bittersweet could be another company’s semisweet! In general, bittersweet chocolate contains more cacao (we would say at least 70%) and hence less sugar than semisweet. The cacao content, quality, and taste of the chocolate is more important in determining which to use in a recipe and is a matter of personal preference. Unsweetened chocolate contains no sugar – it is straight cacao liquor (ground cacao beans).
