Nonstick is a coating on the pan, but it can easily be scraped off, and get into your food. You don’t want those carcinogens in your food, it’ll make you sick. Hard anodizing, on the other hand, changes the microscopic texture of the surface and can change the crystal structure of the metal near the surface. The end result of both is a surface that is easy to clean and food doesn’t stick too. Except that nonstick won’t last you very long compared to anodized. I have had both cookware, and I have to say, it is WORTH IT to spend more for anodized, trust me. Try to get Pampered Chef if you can.
