What is the difference between a holding freezer and a blast freezer?
A holding freezer usually has product loaded that is already frozen. This means that there is no extra refrigeeration needed to freeze the product. The temperature of a holding freezer will be in the range of -18 to -20ºC. In the case of the blast freezer, the product is normally fresh (in the case of meat) or unfrozen (in the case of ice block manufacture.) The temperature of a blast freezer will be in the range of –23 to –3-ºC.
