What is the demarcation between a vegetarian and a
on-vegetarian?

Demarcation means creating a boundary around a place or thing, or creating a separation. So using your sentence, the demarcation between “‘vegetarian’ and a ‘non-vegetarian'” is “and a”. Oh, and vegetarians don’t eat flesh foods.

I Dont know the demarcation between a ‘vegetarian’ and a ‘non-vegetarian’. But according to me the difference between ‘vegetarian’ and a ‘non-vegetarian’ is: *A ‘non-vegetarian’ is one whose mouth waters if an animal(Goat,Chick, pig etc.) is being killed in front of him. *A ‘vegetarian’ is one whose eyes water(tears roll down) if an animal(Goat,Chick, pig etc.) is being killed in front of him.!!
