What is the best way to roast a chicken?
This is one of the ways I use. Wash chicken and pat dry, sprinkle with salt and pepper and rub with garlic ( or any other options you want) and if desired. Put in non stick oven pan breast side down, leave it on lower shelf till it reddens on that side, then turn over and do the other side, until all evenly golden. Pour 2 cups of warm stock over it. and pour over the chicken with a large spoon every few minutes during cooking process. Always leave a little of the stock ( which will thicken once cooking time is almost over) When you place your chicken on the platter and any other roasted veggies, pour the left over pan juices over the chicken, This keeps it really moist. I stuff my chicken too. But this is just a brief idea. This is always a winner at my house. You can add rosemary to it also to enhance its taste during cooking.
