What is the best way to preserve my top tier or leftover cake?
First remove the base board. Then wrap the cake lightly in plastic wrap. Freeze for one hour. Remove the first wrap and replace it with a fresh wrap (this time snugly to get as much air out as possible). Freeze the cake again. When you are ready to enjoy the cake again, defrost it in the fridge (still in the plastic wrap) for four hours (for smaller portions, one hour will suffice). Then remove the wrap, and defrost at room temperature for one hour.
