What is the best way to decorate a Christmas cake with glace fruits and nuts?
If you do not want to ice the cake then take half a jar of apricot or peach jam and place it in a saucepan, melt it gently over a low heat until it is liquid and then strain it to remove all the fruit pieces. Allow the jam to cool while you finish organizing your fruit and nuts, then pour about half the cooled liquid over the top of the cake and smooth out with the back of a spoon add a little more if it does not seem thick enough then decorate. Rewarm what is left of the jam and brush it over the top of the cake and decorations, everything should hold together nicely. Another way to do what you want is to add a layer of nuts to the top of the cake mix when you are ready to bake it but, to be honest, you have to take a lot of care not to let them burn and they may even sink on you on a bad day.
