Only bring a sleeping bag if you are going to camp. Most people backpacking use hostels, and most hostels do have beds all made up, with sheets and blankets or duvets and do not allow you to use your sleeping bag. A sleeping sheet is a good idea, but if you are packing real light, do not bother. I have used my sleeping sheet once in a three week hostel trip. For your backpack, take as small a pack as you can, you will be walking with your pack more than you would expect and packs do get heavy. I have learned to travel with a day pack rather than a full size pack and am much happier with it. I still bring things I do not need, but not as much.
