I ama former chef and soak my fruits in sherry and port, the add brandy to the cake batter and soak it with a syrup that I add aged Madeira wine to, I have to label them as flammable after that, cream or sweet sherry is fine, brandy is better in the cake, but port, Madeira, marsala and even a sweet white wine called Sauternes is nice. To make the cake darker use dark brown sugar or molasses in the batter, I also put a bottle of dark beer or Guinness stout in mine.
