What is the best set of kitchen knives?
I work part-time in a high-end culinary supply store and this is the advice I give my customers when they ask which is the “best” knife: The best knife is the one you’re most likely to use. It has to feel good in your hand and be the right weight and shape for you and you alone. I always recommend that my customers hold a few different brands before they choose. That being said, here are the actual brands you should consider: If you’re interested in very sturdy, forged metal, German-style knives, then you want to look into Henckel or Wusthoff (I have Wusthoff knives that I’ve used for years & I love them). If you’re interested in knives with a bit more finesse and finer blades, you may want to investigate Japanese-style knives such as Shun or Global. Be sure that the knives you get are full tang and have forged blades. I know that both Henckel & Wusthoff make lower-end knives for some discount stores that are very low quality stamped blades.
