Hooray! I created a self-study “speculative fiction” course as part of my degree many years ago. I just had to applaud you because I love science fiction, fantasy and horror. This is a great idea. Unfortunately, I can’t think of any good anthologies for you right now. I will let you know when I do. Good luck!

“The Year’s Best Science Fiction” by Gardner Dozois is a very good anthology that is updated every year, so it’s always in print. Gardner Dozois has won the Hugo Award for Best Editor twelve times. Also, “Year’s Best Fantasy & Horror” by Ellen Datlow and Kelly Link and Gavin Grant. I think of these two as sister anthologies, every year they are full of gems.
