Hydrogenation is the process of chemically altering an oil by adding hydrogen atoms to the oil molecules. This forms stronger molecular bonds, which now require more heat to break apart. This effectively raises the melt point of the oil and creates hard oil at room temperature. Unfortunately, the body needs to work harder to break down and digest these new hydrogenated molecules.
