What is that vinaigrette Michele makes in big batches on her show?
Richard H., Missouri City, TX You will be surprised at how simple it is. What I like to do is to combine 2 cups vegetable oil, 1 cup extra virgin olive oil and 1 cup of a delicious high quality wine vinegar; sometimes it is red and sometimes it is white, depending on what I have in the house. Then I peel a couple of cloves of garlic, smash them lightly with a knife and put them in the dressing along with a tablespoonful (or sometimes more) of a fine quality Dijon mustard. I season this well with salt and pepper and transfer to a glass jar. When I need some dressing it is at the ready and then, because it is so neutral, I add dried or fresh chopped herbs to taste. Sometimes I add a few spoonfuls of blue cheese to a portion of dressing. This way I have a basic mixture at the ready and one which I can add to depending upon what I am in the mood for.
