What is tahini?
Arthur, H. San Antonio, TX Tahini is a thick paste made of ground sesame seeds, used primarily in Middle Eastern cooking. You can find it in most supermarkets and health food stores. Tahini is used as a base for many sauces and dips served with vegetables, meat, chicken, fish , shellfish and pita bread. The sauces and dips are rich and creamy and full of B vitamins, calcium, phosphorous and iron. You can use tahini straight out of the jar, but it will be lighter and creamier with a bit of lemon juice. Tahini is wonderful flavored with a variety of foods such as: onions, pine nuts, garlic, lentils, radishes, anchovies or pumpkin puree! My five-year-old nephew, Patrick, asks: “What is birch beer soda; birch trees?”!!! (I am at a total loss…Thank you for your help.) Mark C.
