What is sourdough?
Baking bread from sourdough is a tradition that dates back thousands of years. Sourdough enhances the bread’s flavor, keeps it moist and fresh for longer and increases the body’s absorption of healthy minerals. It also gives the bread a firm, smooth structure and makes it easier to cur. Research at Lund Institute of Technology (Lunds Tekniska Hogskola) has shown that sourdough bread induces a lower blood sugar level than standard bread. Another positive effect is that eating a small quantity of sourdough bread delays the emptying of the stomach, keeping you feeling full for longer and reducing the urge to snack between meals. The effect varies from person to person.
