SAPP is a widely used “food additive” It is defined as a Sequestering or Chelating Agent (used interchangeably) who’s function is to prevent browning of the potato pieces thereby maintaining their natural color. Sequestering Agents bind to and subsequently deactivate iron or other metallic ions in water. For our purpose deactivation of the metal ions prevents oxidation and resulting discoloration of the potatoes after they have been cut.
