What is Rogan Josh?
Rogan Josh is Goat or Sheep curried in bright red colored thick curry sauce. What is the difference between Rogan Josh and Korma The dish included meat on bones. The fat from dish floats on top with reddish color. At the time, tomatoes had not yet arrived in India. The dish did not use Turmeric or tomatoes. The dish originated in Kashmir. The Kashmiri spices Ratan Jot, and Degi Mirch were added to give it red color. In the olden days, Ratan Jot was basically used as the natural red food color. In a way, Rogan Josh is a red-colored Korma without nuts and cream. If Ratan Jot is not available, you may use Maval petals. It has yogurt and aromatic spices. Nowadays, Peppercorn, Cardamom, Clove, and Cinnamon are almost necessary. The meat is cut into about 1″ cubes, browned in Ghee before cooking on low heat.
