Metastability in molecules is the ability of a non-equilibrium chemical state to persist for a long period of time. Metastable liquids are liquids that persists in its existing equilibrium when undisturbed, but able to pass to a more stable equilibrium when sufficiently disturbed by means of oxidation. Usually metastability is due to a relatively slow phase transformation. In other words, as long liquids are airtight, not subject to UV-light or heat, liquids remain in the same chemical state.
