Real Absinthe is defined as being made with Grand Wormwood (Artemisia absinthium) which is the source of thujone, the component which led to the banning of Absinthe around the world in the early 1900’s. Other licorice-flavored products such as pastis were introduced to fill the void which were not made with Grand Wormwood.
