Induction cooking is the heating of food on a cooktop that contains an electromagnetic element (as opposed to a gas or coil element that heats up). When a cooking vessel is placed in the electromagnetic field, the field then transfers energy into the metal of the vessel, making the cooking vessel itself the source of heat.
