What is indirect heat?
That is where the fire (burner) is turned on one side of the grill and the meat or food is on the other side. This way the heat is not Directly under the food so it will cook slower. The slower that you cook any meat the more tender it is. The other tip is to keep a lower heat temperature that you would if you were grilling burgers. You only want to have it on low so that it will slowly cook.
