It is part of honey’s natural process. All honey will crystallize in time, but it never spoils. Store honey in a tightly closed container in a dry place. It is not recommended to Freeze or refrigerate honey for this will cause it to granulate quicker. Crystallized honey does not mean that it is ruined. It simply needs to be liquefied. To do so, place the (uncovered) container in a pan of boiled water (off the stove) until the honey turns clear. Or you can put it in a (uncovered) microwaveable container for 10 seconds at a time. But remember that: Do not overheat; honey can scorch.
